*drools* I absolutely love roast beef, and it's one of my favorite things to make. Plus its easy to make and never fails to impress people if you need to cook dinner.

I've never roasted beef like that recipe advises. I put it in a pan that has a rack, with a cover to keep the moisture in. I roast it with the red wine, water and olive oil on the bottom of the pan with an onion chopped up finely and baste it every 15 minutes. Paprika is a nice thing to rub on the roast as well.

I put mine in a roaster with a rack, too. Seems messy to do it the way they suggest, IDK. I didn't use a lid though, but the roast turned out very juicy regardless. The lid might help it to cook faster though. Roasting it with red wine in the pan sounds delicious!

I make roasts like they do in the recipe, only I don't brown the outside at a higher temperature. It cooks it really evenly, so if you like medium or rare roasts it makes a difference. Since it's for Declan though I imagine well-done is what you were aiming for, lol.
